Les Collines enters a new chapter under Gian Marco Heilmann - one that expands the idea of what a preserve can be. Still rooted in seasonal fruit and small-batch production, the Hudson Valley brand now approaches each release as something more considered: an expression of time, place, and perspective.
Originally rooted in traditional jam-making, Les Collines has quietly built a following among farmers market regulars and discerning local shoppers. Under Heilmann’s direction, the brand is being reimagined with a focus on restraint, structure, and sensory experience - where each jar reflects not only fruit at its peak, but a point of view.
Heilmann’s path to Les Collines is unconventional. Trained as a filmmaker, he arrived in the world of preserves through a period of personal transition, drawn by the intersection of craft, transformation, and memory. “Preserving, at its core, is about holding onto something fleeting,” Heilmann says. “What interested me was the idea that a jar could carry more than flavor - it could carry a moment. Something seasonal, intentional, and quietly expressive.”
That philosophy extends beyond the contents of the jar. The brand’s recent redesign introduces a distinctive visual language: each flavor is expressed through its own color composition, creating a collection that feels curated rather than standardized. The preserves are now housed in custom hexagonal jars, finished with gold lids—subtle architectural objects designed to live comfortably on a table, not just in a pantry.
The intention is not abundance, but clarity.
Production remains deliberately small-scale, allowing each batch to respond to the character of the fruit - its acidity, sweetness, and structure - rather than forcing uniformity. Flavors are released seasonally and produced in limited quantities, reinforcing a sense of timing and discovery.
The result is a line of preserves that move fluidly between contexts: a spoonful beside a cheese course, a note of acidity in a composed dish, or a quiet counterpoint in a cocktail.
Heilmann will present the evolving Les Collines collection at the Summer Fancy Food Show at the Javits Center in June 2026, marking the brand’s first formal introduction to a national specialty food audience.
“We’re not trying to make preserves more modern,” Heilmann adds. “We’re trying to return them to something more considered—something that invites attention.”
Les Collines is currently available online and at select retailers, with a broader expansion planned throughout the year.
